Fresh Tomato Bruschetta

Recipe for Fresh Tomato Bruschetta:

Ingredients:

  • 4 Large Tomatoes
  • 1 Cup Mozzarella, finely diced
  • 1/3 cup fresh basil, chopped
  • 3 medium cloves garlic, minced
  • 2 Tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoons black pepper
  • 1 loaf crusty Italian bread
  • 3 cloves garlic

Instructions:

Draining time= 30 minutes. Prepare grill or preheat oven to broil.

Cut tomatoes in half horizontally and squeeze out seeds. Cut tomato into very small dice. Place in a colander and drain 30 minutes. Transfer tomatoes to a bowl and add next 7 ingredients. Cut bread into 1/2inch slices. Lightly crush garlic cloves with the side of a large knife or cleaver. Remove peel. Rub bread with garlic cloves. Toast both sides of bread on grill or under broiler. To serve: transfer tomato mixture to a small serving bowl placed in the center of a platter. Surround with toasted bread and allow guests to serve themselves. Alternately, spread some tomato mixture on each slice of bread, arrange on a platter and serve.
